This is one of my favorite foods. I was bored and thinking of recipes I’d like to try and thought this one up. It is delicious.

Ingredients

One Medium Onion 3 cloves garlic French Beans

Dash of Paprika Olive Oil

Ground Cumin Curry Powder

Ancho Chili Cured Bacon (4 slices, purchased from Whole Foods) 2 Cups of Quinoa

Preparation

Sauté onions and garlic in olive oil. After onions have sweated a bit, dust them with paprika. When they really start to lose their water, add the bacon cut into thin strips (I do ¼”). Cook until the bacon changes color but isn’t really cooked.

Add quinoa, toast. About 7 minutes on medium heat. I just go by smell.

Add 2 cups of watered down broth (to taste). Bring to a boil, add ½ tsp cumin, 1 tablespoon curry powder (there abouts, to taste).

Simmer for 20 minutes, add french beans to the top. Cook another 6 minutes until the beans look tasty.

Consume with vigor.
